Definitely one of the most beautiful fish in our range and although pink is the dominant colour, it does indeed boast beautiful small sky blue spots which you might be able to admire if you enlarge our picture. It’s from the Canary Islands. where they know it as pargo amargo, which has more of a ring to it, we think. In France, they call it dorade rose. We sell it whole - descaled, de-finned and cleaned.
